Lemon Basil Chicken

Looking for an easy, delicious way to cook boneless chicken?
This is the best marinade I've ever found for chicken! Can be made on the grill or in the broiler (I usually cook in a grill pan or George Foreman type grill)

You can substitute oregano for basil for a change of pace.
Nice on turkey cutlets or tenderloin.

Lemon Basil Chicken

1/4 cup olive oil
1/4 cup
lemon juice
1 teaspoon grated
lemon rind
2-3 cloves minced garlic
2 tablespoons white wine vinegar
1 tablespoon dried
basil
1/4 teaspoon salt
1/2 teaspoon freshly ground pepper
4-6 boneless, skinless
chicken breasts

Combine olive oil with next 7 ingredients.

Arrange chicken in a shallow glass dish.  Pour marinade over chicken, turning once to coat.
Let marinate for at least one hour, the longer the better. (up to 5-6 hours)

Grill, about 5 minutes on each side, depending on thickness of chicken.
