And so I'm cooking more. tonight I made a pork tenderloin. Pan roasted. I gave it a rub with garlic powder, a drop of salt, black pepper and some Penzeys Bavarian Seasoning. Threw it in a zip loc bag and let it sit in the fridge for 5-6 hours. I browned the tenderloin in a non-stick skillet, then sauteed some diced peppers, carrot and squash that I had bought at the market. (I put in about a tablespoon of olive oil first). Put in some beef broth (it's what i had) and after it evaporated, I put in some marsala wine. I covered the pan so the meat would cook through. I turned it several times, too so it would brown evenly. It took about 20 min total. Very tasty! I served it with brown rice and the sauteed veggies with a salad on the side.
I also spent part of the evening converting a recording I had of my dad on the radio to an mp3 file. It was on a cassette tape!! thanks to my friend Stan for telling me how simple it was to do. It cost me $5 for the cable.... All i had to do was connect an old boom-box to the computer via the cable, download a couple of software programs and it was done. Well...it was easy but it took me awhile to figure out how to edit out the songs and the commercials.
I wonder if I can post it here??
